That sounds like a result of using macOS's Dark Mode (System Settings, Appearance -> Dark).
One answer: change to Light Mode (System Settings, Appearance -> Dark).
Or, if you want to stay in Dark Mode for the rest of your Mac experience, the following seems to work (not tested extensively) in VMD TkConsole window to set a white background:

tk_setPalette white
